Stripe EasyPay was designed specifically to address the need for professional services companies to accept credit card payments through their site when they do not charge the same amount every month. Currently, this feature is not supported, but a new version of Stripe EasyPay is in the works which allows a module to be created that charges an amount defined by an administrator/manager.
